Last night’s dinner was really yummy!! I broke out my new Instapot and worked a little magic.
I made Carrot and Cardamom Soup from Nom Nom Paleo, Cracklin’ Chicken also from Nom Nom Paleo, Roasted Beets (from the garden) with homemade vinaigrette, and sautéed broccoli and cauliflower.
Everyone really enjoyed the meal. And I got to use my fresh beets – score!!

This is “Magic Mushroom Powder”. This is the spice combination used on the Cracklin’ Chicken and the recipe is in the Nom Nom Paleo book. I can tell you this mixture really added to the flavor of the chicken. This was a super winner, dinner!!
